How we choose the best quality meat for all our dishes

At the Diplomatico, we care a lot about the quality of the products we serve . This is why all our beef preparations are made with Argentinian grain fed beef . The quality of the meat he uses is Chef Hervé's first secret for making such a fabulous tartare.


There are 2 good reasons to carefully selct the meat we put in our dishes:

(1) because it tastes better

(2) because it is more respectful of animal wellfare


We always have been very cautious about where the meat we eat comes from. Has the animal been breeded in good conditions? Was it killed in a respectful way? These are things we cannot easily have a grasp on, especially when you don't have time to do the research. When you have a restaurant, the selection of your alimentary products are however at the center of the job. We therefore decided to take great care to choose the best products for you and to work with suppliers with whom we share certain quality standards. As for the meat, it took us a while to find what suited the Chef, especially for the beef : an Argentinian beef, carefuly raised and fed with grain only.

This meat is concurencing Brezilian intensive farming where animals are fed with soya and raised in cages. This way, not only your dish tastes better but it also participates to the dismantelement of a disrespectful agronomical industry.
